I've heard Organic Transit is working on a 2 seat option.

I've been told that too but don't see any progress or demo designs. Maybe an owner will have to revise their ELF into a 2 seater to get them moving. OT has been working on the new rear tire, rear disc brake and a few other ideas but no 2 seat option yet. Their OT website still shows these items coming, but not 2 seats =
Top Secret New Stuff!

We?ve been busy in the ELF workshop, behind Santa?s back! Coming soon??rear disc brake, super fat rear tire, optional doors, rear jump seat, hemp seat covers, front suspension, wireless front/rear camera, 8 speed SRAM rear hub, 11 speed electronic shifting, integrated navigation/charge state app. We?d tell you more, but we like to keep a few surprises to ourselves?we?re funny that way.

They now have a tandem, 100 lbs limited seat option but it's $500
Build your ELF 2FR Second Seat Option

What could be more fun than riding your ELF? Sharing it with a friend, of course! This option allows a passenger (or a pet or 2) to ride along with you, seated on a comfortable padded motorcycle seat behind the driver?s seat. A separate lockable cargo compartment behind the passenger seat is handy for carrying those extra items, and a full marine plywood floor adds safety for your precious cargo, as well as a quieter ride and extra storage.

They also have doors that are removable on nice days.
